AN AMERICAN PIZZA RESTAURANT IN CHIANG MAI
The story behind the dough, the pan, and why we brought Detroit-style pizza to Chiang Mai's Old City. Alphabet City Pizza Co. is a Detroit-style pizzeria in the Old City, square pans, mozzarella/cheddar blend to the edge, sauce on top, and a room built for staying a while.
THE STORY
Alphabet City Pizza Co. started with a simple frustration: you could find plenty of pizza in Chiang Mai, but you couldn't find American pizza, the kind that comes out of a heavy steel pan with a fried, golden bottom and a lacy crown of caramelized cheese around every edge.
So we built it. We named the shop after Alphabet City, the corner of downtown New York where nobody smooths anything over and the music is always a little too loud. The pizza is pure Detroit: dough cold-fermented for 48 hours, pressed into oiled steel, cheese pushed all the way to the corners, sauce ladled on last.
Everything is made from scratch in-house, dough, sauce, dips. Nothing is shipped in frozen, only quality fresh ingredients. It's the same pizza we'd want to eat ourselves, served in the middle of Chiang Mai's Old City.
WHY DETROIT-STYLE
Detroit-style is the most rewarding pizza to make and the most fun to eat. The steel pan does something no deck oven can: it fries the bottom of the dough while the cheese at the rim turns into frico, crunchy, browned, almost lacy. That's the corner piece everyone fights over, and it's the reason we chose this style over any other.
